A culinary journey in the heart of our gastronomic garden
Dear customer,
Welcome to our flourishing gastronomic garden! Here, you will discover a place where nature and the land are our sources of inspiration. We are delighted to announce that this year, we have undertaken an exciting experiment by adopting a permaculture garden, entirely organic! Permaculture is an approach to agriculture and sustainable design inspired by natural ecosystems. Its aim is to create agricultural systems and living spaces that harmoniously interact with each element benefiting the others. This initiative stems from our respect for the environment and our love for authentic products.
Every day, we make every effort to cultivate a variety of fruits, vegetables, and edible flowers that enhance our dishes. Under the promising leadership of Chef Cuisinier Julien Laval and with the expertise of Chef Sommelier Jean-Noël Rahmani, each dish and glass will offer you a unique experience.
From the vegetable garden to the plate
In our gastronomic restaurant, our commitment is to showcase a wide selection of fresh, seasonal ingredients, some of which come directly from our garden. In our current menus: come and savor our freshly harvested courgettes, our pineapple sage leaf sorbet, our bell pepper condiments with young shoots, as well as our appetizer with castle rosemary foam.
Our garden is full of other gastronomic treasures, such as blueberries, five varieties of basil, cucumbers, sun-ripened tomatoes, chard, a multitude of aromatic herbs... Each ingredient is cultivated with love, and we strive to maintain a true complicity with the nature that surrounds us.
